The materials which are added individually or simultaneously into food to form sweet taste, sour taste, salty taste, umami but not including bitter taste, are called seasoning agents. It can be divided into four types including sour taste, sweet taste, umami, and salty taste. Seasoning Agent of Sour taste can be divided into organic and inorganic acids, and it can not only bring foods sour taste but also have a multiplying effect while using together with preservatives, coloring agents, antioxidants. Seasoning agent of sweet taste can be divided into natural and synthetic. Its sweetness now cannot be measured through physical or chemical methods, but we can only regard sucrose as a standard and judge its sweetness by means of comparing with sugar. Seasoning agent of Umami can give food umami and modify the taste of the food. Every Seasoning agent of Umami has its different umami, and we can collocate them each other to present a richer flavor. Seasoning agent of salty taste can prevent enzymatic browning of fruits, which possess an antiseptic effect.
